Vargnano Monocultivar Nostrana
This very limited production is obtained exclusively from the cultivar Nostrana. The olives are still harvested green, which allows the cultivar to best express its characteristics. The oil is pale green in colour, the fruitiness is intense, with ample herbaceous fragrances of green apple, rhubarb leaf and tomato; the palate emphasizes the aromatic breadth, closes an elegant spicy green olive. Strictly raw, to enhance fish carpaccio, salads, vegetables and soups.
