Nova Vera Organic Early Harvest olive oils are produced by cold pressing the olives grown in our groves and harvested carefully without any damage and being transported to our mill within 3-4 hours. From olive to olive oil, temperature measurements are made at 6 points at all stages, and using latest technology infrastructure, it is ensured that temperature is kept below 22°C. By applying the principles of early harvest and cold pressed processing fully, the phenolic components naturally found in olive fruit are transferred to olive oil at the highest level.
