Nuova Sarda Industria Casearia S.r.l. was founded in 1990, continuing the work already initiated in 1936 by Antioco Fanari the dairyman and transferred to his son Giuseppe. The company has assumed its actual dimensions thanks to the job of Giuseppe’s sons: Antioco, Rosetta and Giovanni who continue the work of the father with all the energy, the passion and the love that has been transmitted to them. The company is precisely a family-run and produces a fairly good range of cheeses including fresh, semi-mature and mature, with an excellent taste and result of a quality production and a careful production to the parameters of hygiene. The company is located in the countryside of San Nicolò D’Arcidano in its owned factory and it is specialized in the production of sheep and goat cheeses and ricotta of medium-high level. It is easy to understand that sheeps left to graze in land close to the sea produce a saltier milk, and that the goats used to climbing the impervious rocky ridges give milk with a stronger flavour. In any case, the secret of the taste of our cheeses lies in the absolute quality of the raw material, which is of a nature that knows no pollution or manipulation by man. Despite the continuous research for innovation and improvement, the company has preserved the traditional production processes trying to not denaturalize the intrinsic characteristics of typical Sardinian product.
